About Me

I'm Lindsay (Carroll), the face behind Carroll's Custom Cakes. Head chef, designer, decorator, dish washer and cleaner!!

I have always had a passion for baking. One of my earliest memories is standing in our family kitchen, finding a recipe in one of my mother's many cook books and making that recipe. I would spend hours decorating and trying to duplicate what was on the page in front of me.

​

From then on baking was always a hobby and I would enjoy baking with my own children, making their birthday cakes, or feeding friends and family with my latest treats!

​

It was in  2020 that I decided that baking and cake decorating had become more than a part time interest and I turned it into a full time career. I now work from my home studio just outside the picturesque village of Kells, Co. Kilkenny.

​

Combining my 12 years experience as a floral designer and my love of all things cake, my aim is to always produce a show-stopping bake that will taste as good as it looks. With every creation comes the finest ingredients, attention to detail and customer care.

Carroll's Custom Cakes is registered with the HSE and I hold 'Food Safety (HACCP) Level 1 & 2'.
